During the bloom, entire families take to the fields at dawn, hand-picking flowers before the sun gets too strong — the delicate stigma inside each flower degrades quickly once picked, so speed and timing are part of why the harvest is so labour-intensive. The Saffron Extraction Process

After picking, the three red stigmas are separated from each flower by hand — a slow, precise task usually done by the women of harvesting families, often in the evenings after the day's picking is done.
