Higher numbers (like W320) mean smaller kernels. This grading only applies to whole cashews; broken pieces are graded separately and are usually cheaper, though the flavour difference is minimal.

Cashews have a higher fat content than most nuts, which means they can turn rancid faster in warm, humid conditions — refrigeration extends their shelf life noticeably if you don't go through a pack quickly.
