Natural, Unshelled Pistachios
This is pistachios in their most traditional form: no roasting, no added salt, shell mostly intact (often naturally split, showing the kernel). Cracking each shell by hand slows down eating, which some people actually prefer — it turns snacking into more of a ritual than a quick handful. The flavour is milder and slightly sweeter than the roasted version, closer to what you'd get fresh off the tree.
Roasted & Salted Pistachios
Roasting deepens the flavour considerably, bringing out a richer, nuttier taste, and the added salt gives it the more familiar "snack" profile most people associate with pistachios at a bar or on a table during gatherings. These are shelled or easy-crack, built for faster, more casual eating.
Which to Choose for What
- Slow snacking, mindful eating: Natural unshelled — the shell-cracking naturally paces you.
- Entertaining or quick snacking: Roasted and salted — easier to serve and eat in larger quantities.

Nutritional Difference
The core nutritional profile — protein, fibre, healthy fats — is largely similar between the two. The main practical difference is sodium: roasted and salted pistachios obviously contain added salt, worth factoring in if you're watching sodium intake closely.
Storage
Both keep well in an airtight container away from heat and moisture. Roasted pistachios have a slightly shorter peak-flavour window than raw, since roasting can make the natural oils more prone to turning over time.
