Pistachios are one of the few nuts that work equally well as a plain, health-focused snack or a savoury, flavour-forward one — which is exactly why we carry both a natural and a roasted-and-salted version. Here's how to decide which one belongs in your pantry, plus a natural pairing that Kashmiri households have relied on for generations.
Why pistachios stand out among nuts
Pistachios are lower in calories per handful than most other tree nuts, largely because a good portion of their weight is shell. They're a source of protein, fibre, and healthy unsaturated fats, and unlike many nuts, they contain a meaningful amount of vitamin B6 and potassium. The shell itself also does something clever: it naturally slows down how quickly you eat them, since cracking each one takes a moment, which some nutritionists point to as a built-in portion-control mechanism.
Natural, unshelled pistachios
Our Natural Pistachios come with no added salt or seasoning — just the pistachio, in its shell, the way it's traditionally eaten. This is the better choice if:
- You're watching your sodium intake
- You want to season them yourself (a squeeze of lemon, chaat masala, or your own spice blend)

Roasted & salted pistachios
Our Roasted & Salted Pistachios take the same nut and finish it with a light roast and a touch of salt. The roasting process deepens the flavour into something toastier and more savoury, and the light salt makes them an easy, ready-to-eat snack with no prep at all. These are the better choice if:
- You want a savoury snack straight out of the pack, no seasoning needed
- You're serving them at a gathering, where a bit of flavour goes over better than plain nuts
- You prefer a deeper, roasted flavour over a raw, neutral one

In Kashmiri households, pistachios are often paired with dried apricots as a contrast snack — the pistachio's savoury crunch against the apricot's natural sweetness. Our Jardalu Dried Apricots are a deep red-orange variety, sweeter and less tart than the more common golden Khubani, which makes them a particularly good match for salted pistachios specifically — the saltiness and the apricot's sweetness balance each other out.
How to store pistachios properly
Keep pistachios in an airtight container in a cool, dry place. In-shell pistachios generally stay fresh longer than shelled ones because the shell offers some protection against air exposure, but either version can be refrigerated to extend shelf life further, especially in warmer climates.
A quick note on portion size
Pistachios are nutrient-dense, so a small handful (roughly 15-20 shelled pistachios, or a bit more if in-shell) is a sensible daily portion rather than eating large quantities in one sitting.
