Kashmiri Chilgoza Pine Nuts (With Shell)

Chilgoza, or pine nuts, grow inside the cones of the chir pine tree found across the Himalayan region, including parts of Kashmir and Ladakh. Sold here in-shell, they have a distinctive long, narrow shape and a naturally sweet, buttery kernel once cracked open.

Chilgoza are one of the more labour-intensive dry fruits to harvest, since the cones need to be collected and dried before the nuts can be extracted — part of why they're priced higher than more common nuts. In-shell chilgoza also keep their flavour fresher for longer than pre-shelled versions.
